Once upon a time...

Traci had a bakery. It was simple in construction, and pristine in its standards. Even in a small town of 300, it was an immediate success, paying for itself in the first week of business. The store also included a smoothie bar, cafe and health food store, carrying only the merchandise that fit Traci's standard of "Truly Healthful". The baked goods were exclusively sprouted, and the lunch bar menu taken from the pages of Traci's recipe books. Many who could never dine out enjoyed the convenience of prepared foods that were truly healthful. We operated it with pride from April until September, when the amount of business had clearly outgrown the space. At this time, another health entrepreneur, Curtis Haderlie, of Haderlie Farms, offered to move the store to his location, tripling the floor space. It was an offer we couldn't refuse. It wasn't to last long, however, Traci was due to have a baby any day and with the weight of teaching cooking classes, homeschooling 4 daughters and the expectation of her fifth child, she gladly relinquished the bakery and store completely. 

The next year, Kal and Traci decided that this would be the final chance Kal ever had to  finish his D.C. so they packed up their family and moved to Atlanta, where Kal is currently pursuing his degree. Traci, and many others familiar with her philosophy and standards, long for the bakery to become a reality once more. It is one thing to know what is Truly Healthful, but quite another to practice it full time, because of how convenient other foods are. The mission of Traci's store is "Making Truly Healthful Food Convenient". Imagine a store where you could buy everything from handmade Almondaise to Take and Bake Sprouted-Grain Pizzas and even something Truly Healthful for dessert.
